to the guy who thinks this is an actual bread-lovers community:

this journal was started as a joke. if you didn't read all the previous entries, this was supposed to be dedicated to bread and punk, and the cosmic connection between the two. sorry to break it to you, but i dont think anyone is going to be sharing any recipes... unless you totally snake this journal for an actual bread-lovers community. that would be hilarious. but yeah. sorry.

jack_burroghs: got culture?

Anyone in or near the South San Francisco Bay area with a good sourdough culture they could let me have some of? I have one made with regular yeast, but it's borring, and not what I wanted anyways.

jack_burroghs: been messing with my bread machine

This was to a friend who just got one, but seems good here.

So, a few recipies, I have made the 1.5lb versions of these and like them, but am posting the 2lb versions for you.

From The Bread Lovers Bread Machine Cookbook

100% whole wheat bread (note that I am inclined to replace the molasses with something blander)
1 c water
7/8 c milk
3 T canola oil
1/3 c light molasses
5 c whole wheat flour
1/4 c gluten
2 1/4 t salt
1 T + 1/2 t SAF yeast or 1T+1t bread machine yeast

Load as per your machines instructions, bake on whole wheat or regular (if no whole wheat and your machine is rated for 100% whole wheat) medium crust.


White Whole Wheat Bread
King Arthur Flour has a white whole wheat, it's a different variety of wheat, kind of in between white and whole wheat in effect.

1 5/8 c water
3 T olive or nut oil (use a mild olive oil)
1/3 c maple syrup (I've only use the real thing)
4 1/3 c white whole wheat flour
1 1/2 T gluten
2 t salt
2 1/2 t SAF yeast or 1T bread machine yeast


Chuck William's Country French (as in Williams & Sonoma)
This one is my fav of these 3
1 2/3 c water
3 c flour
1 c whole wheat flour
1 T gluten
2 t salt
2 1/4 t SAF yeast or 2 3/4 bread machine yeast

bake on either french or regular cycle (I've done both)

At my house, we hardly ever have normal white sliced bread. We always have something different. It's great. :-D Semolina bread sucks, though
